The White Tuna (Albacore) or "Thunnus Alalunga" is captured, one by one, in the Gulf of Biscay and in the best moment of the season respecting the traditional fishing tackle. Because its aroma, its refined taste, its smooth white meat and its properties, White Tuna (Albacore) composes the elitist range of the tuna fish. Once we have selected the best fishes, we cooked them and, following a meticulous and handmade process, the White Tuna (Albacore) is prepared and packaged. The skill and experience acquired over five generations is the key of the exceptional taste and appearance of our preserves. The most "typical" can is elaborated using White Tuna (Albacore) loins, which are covered with specially selected olive oil. This olive oil, with its intense flavor, adds a unique and exclusive aroma and taste to the White Tuna (Albacore) which reminds to the flavor of the sea and the sun dried fields. El "Bonito del Norte" o "Thunnus Alalunga" se captura, uno a uno, en aguas del Golfo de Vizcaya durante la costera de verano y mediante artes de pesca tradicionales. Su sabor intenso a mar, su carne clara y sus propiedades le han convertido, sin lugar a dudas, en el rey de los túnidos. Una vez seleccionados los mejores ejemplares y pasado el proceso de cocción, el pescado se prepara y envasa utilizando técnicas artesanales. La destreza y experiencia adquirida a lo largo de cinco generaciones es parte de nuestro secreto para conseguir el aspecto y sabor excepcionales, de carne blanca sabrosa y apetitosa, de la que hacen gala nuestras conservas. Para la elaboración de nuestra lata más "típica", utilizamos los lomos del Bonito, a los que añadimos nuestro Aceite de Oliva especialmente seleccionado. Este aceite, con su sabor intenso, añade al Bonito un aroma y sabor exclusivo, un delicioso contraste entre el sabor del mar y el de la tierra seca por el sol.
