These anchovy fillets came in a convenient tray, which is a nice change from the usual tins I sometimes grab. The fillets themselves felt pretty soft right out of the package. I've had some anchovies that were almost like jerky, but these were tender and easy to separate. You can tell they are fresh by how pliable they are.The flavor is definitely what you expect from good anchovies. They are salty, of course, and have that strong fish taste that I like. It's not overpowering, though, just a good robust umami flavor that holds up.The oil they are packed in is light and doesn't feel greasy at all. It has a clean taste, which probably comes from being good Italian oil. It adds to the overall flavor without making things too heavy or oily on the palate.The small size is great for a small prep, or even just some salad dressing. It's easy to finish the whole tray in one go without any waste, which is a big plus for me. I also tried them on a salad, and they added a nice punch of umami in classic caesar.
