The short & sweet:- - - - - - - - - - - - - -✅ Strong flavor✅ Unique ingredient✅ One single ingredient: real Italian fermented black garlic💲 Gourmet product at a gourmet price👍 Would recommendMy full, honest review:- - - - - - - - - - - - - - - -I love cooking and especially exploring new recipes and ingredients. Garlic is a favorite in our household, so black garlic is right up my alley! I just had to figure out how to cook with it.First I tried a small piece on its own just to know what I was working with. This black garlic is much more intense, deep, and complex than regular garlic: it's much less spicy, but has a potent, uniquely umami / sweet / smoky palate. It is reminiscent of almost like a caramelized balsamic vinegar, if that's a thing. A little goes a long way! On its own, the black garlic has an almost gummy texture (very different from fresh garlic) that lends itself well to being smashed or pureed, and I imagine it would work really well in a sauce.I ended up mincing 4 small cloves of this and maybe 6 small cloves of regular garlic in a large batch of tomato bruschetta, and it was a delicious choice that I highly recommend. I will probably next use this in a red pasta sauce or an aioli. I imagine it would also pair nicely with something truffle-y, and/or a nice red wine. I am definitely excited for my next culinary adventures with this ingredient!There's no denying that this is a splurge, which normally would make me rate down, but this clearly is something that is aged to perfection: you can't get that for cheap. I also appreciate that it comes from a D.O.P. region in Italy so it's high-quality and authentic. Finally, I like that this has a long shelf-life so you can save it for when you really want to use it! I don't mind a little splurge on something like that from time to time.
