• VEGAN - No ingredients derives from animals are used. Tsuyu is the delicious soup stock used for most Japanese noodle dishes, hotpots and can even be used as a rich dipping sauce for tempura. The combination of bonito and kelp brings a rich and smooth flavor with “umami”, the Japanese word used for one of the five basic tastes.

Delicious. I use it in many dishes aside from Japanese cuisine. It’s salty, even when diluted, so I drastically cut back on adding salt directly. The depth of flavor and umami (overused word, but appropriate here) is amazing. I don’t use any other ingredients like this because I enjoy building them myself, but this is an exception to my own rule.
