We love konjac noodles. They are a great replacement for semolina and pasta which has too many carbs and calories for me plus my husband is gluten free. Bean based pastas also have too many calories and upset our stomachs. This Skinny Mac takes the ease of konjac to a whole new level. I’m thrilled to make an easy lunch of tuna mac with half a box. The cheese sauce is decadent and far better than the stuff in the classic blue box. I like to add grape tomatoes, everything bagel seasoning, and occasionally some more cheese. Plus, the left over mac and cheese reheats nicely in the microwave. This is an all around win for us and will become a staple in our kitchen.
