These are dry to a crispy crunch. They have a good amount of heat and fresh flavor. peppers do get a stale taste as they age, and I'm not detecting any of that. Seeds are minimal, I'd say easily <5%. The size of cut seems good to me, any smaller and I would just toss in a food processor and pulse a few times, or maybe just roll over with a rolling pin because they are crisp and break easily. Color is really good.I sneezed a ton transferring this to individual vac bags. There is not a lot of pepper dust, but there is some. Overall processing and handling of this seems top notch.
