We have a celiac in the house so we are very careful about allergens. This Genkido Gluten Free Tonkotsu-style Ramen is free from many of the most common allergens. I will say in this case our celiac had the noodles (which are rice based) and had no issues. They did not try the soup base. The soup base has soy sauce as a listed ingredient. "Soy sauce" is one of those items that isn't intuitive when people think about gluten but most soy sauce isn't GF unless specifically noted otherwise. It's also sometimes called Tamari. So if I see that I know it's ok. The ingredients list say the "soy sauce" is comprised of water, soybean and salt so it's likely tamari and is gluten free but for a number of reasons (there were other factors unrelated to the ramen) she used the rice noodles in another way. That said, I tried it as intended and while I liked it I did find the flavors good, but subtle. Continue reading for details.These noodles come packaged for 2 separate meals. Each meal contains 2 servings. So there are 4 servings in the bag. I found the serving size to be adequate. There is not really any preparation needed prior to cooking and it couldn't be easier to make. Boil water. Split the water into two portions. Add the soup base to one and cook the noodles in the other. Drain noodles and combine with soup. I like that the soup base is a liquid and dispersed easily. The rice noodles form a thick slurry in the pot as they cook, but this is typical of rice noodles. On it's own the soup base is nice, but overall the dish needs some dressing up. I added scallions, shaved carrots, and a little leftover pork chop that I had. This made it a true meal in my opinion and it was very enjoyable. However, that also means there is a little more work involved in the preparation phase...Overall, I like this product. I appreciate the attention to the allergen communities. I'm fairly certain, but cannot confirm that the "soy sauce" I mentioned above is GF. I am going to review it as if it is. As a meal, I consider this a starter set. You will probably want to dress it up a bit in whatever way you prefer. It's great for getting rid of leftovers. On it's own I'd probably give this 4 stars (or 4.5 if I could give half stars). However, there are few options for packaged, quick make, GF ramen. For that reason I'm rounding up to 5 stars
