I find ramen places always add bamboo shoot to their ramen, so I wanted to replicate that at home. It's really hard to find these in grocery stores. Asian supermarkets sometimes sell these, but they tend to be pickled with some spicy oil which was not what I wanted. This is plain, with nothing added, which is exactly what I needed. You can just eat these straight out of the can, but I recommend throwing them into the soup to cook for a minute or two to give it time to soak up the broth flavor.One thing I find about eating ramen is that because it's mostly carbs, I sometimes get acid reflux from eating just plain ramen. But bamboo shoot has a lot of fiber, which helps with acid reflux. I find if I add these to my ramen, my acid reflux symptoms are either gone or significantly reduced.
