This is a solid gluten-free pasta alternative, but it definitely requires a little more attention than regular pasta. The flavor is good and fairly neutral, and it works well in dishes like mac and cheese or pasta salad where the sauce does most of the heavy lifting.The biggest thing to know going in is how easy it is to overcook. The window between just right and mush is very small, so you really need to watch it closely and pull it off the heat early. I found it helps to use plenty of water and start checking it a minute or two before the suggested cook time. If you nail the timing, the texture is good. If you miss it, it goes soft fast.The other downside is the price. It’s noticeably expensive for the amount you get, which makes it hard to justify as an everyday pantry staple, especially if you’re feeding more than one or two people.Overall, it’s a good option if you’re avoiding gluten and want something clean ingredient-wise, but it’s not foolproof and it’s definitely a splurge, at least for me. It was worth trying, just not something I’d use all the time.
