I absolutely LOVE these noodles! Delicious and so healthy! I have been moving towards a mostly plant based diet and was searching for foods that would diversify my diet and help heal my gut but also taste really good. These organic buckwheat noodles have become a favorite and even my 99 year old father likes them, which is rare with new foods he isn’t used to. The key is to not overcook them and rinse them really well, because they are kind of sticky unless you rinse well. Depending on what I’m using them for, after rinsing I toss them with a little toasted organic sesame oil for Asian inspired dishes, or either olive, avocado, or coconut oil for whatever else I might be making. Great in soup with broth, veggies, and tofu (leave more al dente if using for soup) and amazing in a cold salad with peanut sauce and raw veggies.I make extra and keep them in my fridge, adding them to whatever I am making right before serving. Even with soup, if the broth is really hot you can add cold noodles and the soup will still be hot while the noodles maintain their texture. The buckwheat has a really nice nutty flavor and the texture is toothsome and holds up well. Also great for stir fried dishes. Can you tell that I really like these?!? I’m on my 2nd box and will keep buying them. Try them!! Yummm…
